A-Papa Wild Wheat // 5.0%

When our high-paced friend Amund gave us an old chardonnay barrel a few years ago we filled it with suds, threw in some fun strains of brett and honestly didn't expect the barrel to perform well, but like the barrel's father, it has always exceeded expectations. We let it lazily chill out for just under two years before we pull it out of bed to join the party.

Hay there! Homestead Saison // 6.0%

Inspired by a bottom-shelf joke and brewed in an excessively rustic, no-joke way. A hommage to those that made do with what they had; we brewed this beer with hay and for a unique funk we inoculated it with Old Man’s Beard, a local lichen. Open fermented and aged for 18 months in oak. It’s one of a kind, no joke, and like a really bad joke, it’s really good.

Cele-Bier // 13.5%

A champagne-like-Belgian-inspired-beer-for-celebrations. Cele-Bier. A bier for toasts and a beer for prosts. It's highly carbed, highly alcoholed, and highly corked for a champagne like celebratory experience!

mumbo jumbo sprue tip saison // 6.9%

Sour, with a perplexing complexity that looms heavily in the shadow of the sleeping giant. Born of spruce and rock he slumbers, with the sun on his back, guarding the island as they play.

Hi-Diddly-Ho Flanders Sour Red Ale // 5.0%

Our take on the traditional, sour beer style from the Flanders region of Belgium. Fermented and aged in red wine barrels for more than 18 months. Tart, lightly carbonated with a sweet, malty backbone. It will have you saying “hi diddly ho” to your neighborinos!⠀

Friends in Rural Places Mixed Culture Saison w/ Fairbanks Wheat & Juneau Cherries // 7.3%

Our FIRST ever collaboration with Black Spruce Brewery! By now we’ve done half a dozen but this beer was brewed way back in September of 2019 and delicately aged in oak. Carey toted some Fairbanks grown, raw wheat down to Juneau that subsequently jammed our mill and for the Juneau component Jake added locally grown cherries from his garden that originates from a crop on Telephone Hill. Open fermented with our locally harvested flora, extensively aged in oak and bottle conditioned.

Barrel-Aged Prime time sour // 5.0%

(Always-ish On-Tap) Prime Time sour and we gave it some time (a lot of time 18 months to be exact) to mature in oak. This sour is designed for easy sharing over dinner with close ones. Just like those relationships, enjoy it now or watch it grow with time.

Prime time table Sour // 6.0%

We wanted our core sour to be complex yet approachable so Prime Time was open fermented in our jerry-rigged open-top barrel before being transferred to stainless and then bottle conditioned. The result is a wonderful, dry, tart very sessionable sour.

Convict Saison // 6.5%

What happens when our Convict Soirée gets funky with a saison? You get a love story in a glass with romantic notes of a French saison complete with the deeply criminal, sour complexity of Convict!

Convict Product cork out.jpg

Convict Soirée Foeder Aged Sour // 6.o%

This is our longest project to date. Its origin begins with a blend of yeast and bacteria from back when we were brewing in Jake's brother's garage! We call the blend Convict, because it’s bad to the bone. The beer's deep, sour complexity took more than a year and a half to develop, all the while soaking up the flavors of our American white oak foeder in the Taproom. We then corked and bottle conditioned it back in November and are finally ready to share it with you!

Only Constant Is Change Saison-2.JPEG

only constant is change new age saison // 6.5%

True to a modern-esque-mid-millenia-saison where old meets new or new meets old. Based on a traditional saison recipe yet with a modern-day twist. Brewed in modern equipment using high-quality malts to create an ale that is very crisp with a dry finish and light undertones of pine. The world is changing, the saison style is changing. This beer can keep up, but holds a foot in the past. Grab a bottle of this age-old style, saber it and blissfully chug. Judge whether it will stand the test of time.

Mumbo Jumbo 2.jpg

Mumbo Jumbo Sruce tip mixed culture saison // 7.6%

An array of flavors creates a perplexing complexity in this saison. Local spruce tips contribute a fruity nose that melds with light crystal malt additions to contribute a light, spruce goosey palate. An open fermentation in oak adds earthy, woody notes that wind themselves effortlessly together with the light acidity and musk from our locally foraged blend of yeast and bacteria. The finish is confusingly complex, dry, funky and tart.

Folk Buddies Bottle.jpg

folk buddies dry-hopped saison // 6.2%

We brew Folk Buddies annually for the Great Southeast Alaska Folk Festival. Late addition hops are necessary for a young, ripe experience to continue the legacy of Folk Buddies and its associated festival. Citrus forward hops Lemon Drop, Mandarina Bavaria and Citra offer a soft yet pungent dankness that comes fast and diminishes slowly. German barley and spelt malts mingle with Canadian wheat to contribute a refreshing dryness that carries you for round after round of swing dancing. Dry malt depth and playful hop character are rounded by the light spice and clove contributed by the saison yeast.
